Brinner again! Daddy found a recipe he wanted me to fix… But of course I could not just follow it, I had to tweak it to make it mine.

Breakfast Pastry Bake

2# Sausage, Bacon, or Ham

3 C Shredded Cheddar Cheese

40 oz Shredded Hash Browns, Thawed if frozen

1 Medium Onion, Chopped

2 T Oleo

1-1/2 tsp Dried Parsley Flakes

12 eggs

1 C + 2T Milk

1/2 tsp Salt

1/2 tsp Pepper

1 Frozen Pie Shell

1 Egg, Lightly Beaten

1 T Water

Cook and drain meat as required. Cool slightly; cut or crumble into 1/4″ cubes. Set aside.

In large skillet, saute hash browns and onion in oleo 6-8 minutes or until tender.

Transfer hash browns and onions into a greased 9″x13″ baking dish.

Top with cooked meat, then cheese, sprinkle with parsley.

In large bowl, combine the eggs, milk, salt & pepper. Pour over cheese.

On a lightly floured surface, unfold pastry shell; roll into 9″x13″ rectangle.

Place pastry shell over egg mixture.

In small bowl, combine slightly beaten egg and water; brush over pastry shell. Cut slits in top of pastry.

Bake at 400 degrees for 35 minutes, or until set and golden brown.

Let set 5 minutes when removed from oven.

Serve and enjoy!
